Rapid Wraps

Rapid Wraps

Serves 4
Points per serving 8 (original points)

1 tbsp oil
500g diced lean lamb, chilled or thawed if frozen
2 tsp ground coriander
lemon juice to taste
4 medium pittas or flour tortillas
1 tub 99% fat free couscous
½ x 170g low fat houmous
chilli sauce for drizzling

Heat oil in large frying pan.  Add the lamb and cook 7-8 mins until beginning to brown.  Sprinkle over the ground coriander and season well with salt & pepper.
Heat the bread or wraps.  Fill or stuff with the spiced lamb, couscous, a spoonful of houmous and a drizzle of chilli sauce.
