Quick and Easy Beefburgers
Makes 4
quarter pounders , smaller burgers can be made instead.

1lb lean minced beef
2 beef stock cubes
salt & pepper
1 large onion,grated
Mix all ingredients together, squeezing and mixing well. Form into patties.
They can be fried, grilled, cooked on the BBQ or oven baked.
They take about 15 -20 minutes depending on the thickness.
This is just a very basic burger mixture and it can be altered in many ways - adding finely chopped vegs, herbs et, using lamb with mint, pork with grated apple & sage etc etc the lists are endless - it's good with chilli powder and finely chopped red peppers and kidney bean
Herb Burger
Makes 8
Core recipe
750 g lean minced lamb, beef, pork or turkey ( or a mixture of meats)
2 tbsp chopped fresh basil
1 tbsp chopped fresh chives
1 tbsp chopped fresh rosemary
1 tbsp
chopped fresh thyme
2 tbsp lemon juice
2 ryvita, finely crumbled
1 egg
salt & pepper to taste

Combine all
ingredients well together and divide into 8 portions.
Shape into burgers.
Cook for 5 - 10 minutes each side until cooked through.

Barbecued Beef Balls
Serves 6
Core recipe
500 g lean minced beef
1 egg, beaten
1 onion, finely chopped
1 clove garlic, crushed
1 teaspoon grated fresh ginger
salt &
pepper to taste
Combine all ingredients thoroughly by hand.
Take level tablespoons of the mixture and roll into balls. Cook for 5 -6 minutes moving occasionally.
Barbecued Chilli Beef Burgers
Makes 18
Core recipe
1 kg lean minced beef
3 medium onions grated
2 tbsp finely chopped parsley
1 ryvita, finely crushed
1 egg, lightly beated
1 tbsp skimmed milk
1 tbsp malt vinegar
1 tbsptomato paste
2 tbsp soy sauce
1 tsp chilli powder
3 tsp dried oregano leaves.
Mix all
ingredients wll together.
Divide into 18 pattie shapes, cook for 4 minutes each side. These freeze well
