Pan Fried Chicken with Peas and Bacon
Serves 2

4½pts per serving

salt and freshly ground black pepper
2x 150g med skinless chicken breasts
low fat cooking spray
2 rashers lean back bacon, chopped
4 spring onions, chopped roughly
1/4 chicken stock cube made up to 150ml
100g frozen peas
1 little gem lettuce, shredded roughly


1. Season the chicken breasts.
2. Mist a non stick frying pan with low fat cooking spray and brown the seasoned chicken breasts for 1 min. Turn the chicken, add the bacon to the pan and fry for 1 1/2 mins.
3. Stir in the spring onions and cook for 30 secs until bright green, then pour in the chicken stock and brin to a simmer. Cover the pan, reduce the heat and simmer for 10 mins.
4. Stir in the frozen peas and the lettuce, re-cover the pan and cook for 3-4 mins until the peas are tender and the lettuce has wilted.
serve with mash potato (220g mash with 2tbsp skimmed milk) for additional 2.5pts
