Cheesy Chicken Goujons

Serves 4
4½ pts per serving



4x 125g skinless chicken breast fillets
1 med egg, beaten
salt and freshly ground black pepper
2 med slices bread, white or wholemeal
50g finely grated parmesan cheese
low fat cooking spray

1. Preheat the oven to Gas Mark 7/220c/fan 200c. Slice each chicken breast into seven or eight finger width strips. Beat the egg, with the seasoning, in a shallow bowl.
2. Whiz the bread into crumbs in a food processor and mix with the grated parmesan on a large plate. Dip the chicken strips first in the egg then in the cheesy crumbs to coat.
3. Place on a baking tray that has been lightly greased with the low fat cooking spray, and mist the chicken goujons with a little more spray. Bake for 10-12 mins until crisp, golden and cooked through.
