Oven Baked Lamb (Arni Kleftiko)

1.5 - 2 kilos of lamb non boned lamb cut into portions
Salt
4 bay leaves

Wash the meat and whilst it is still damp place it in a deep ovenproof dish with a lid.   Salt and place bay leaves in between.   Cover and roast in a moderately hot oven (180 – 190 degrees) for 1.5 – 2 hours until the top side is gulden brown.   Uncover and turn the meat. Cover again and continue to roast until the other side is golden brown.   When the meat is tender it is ready to serve,   If it is golden brown but not tender continue to roast turning it over 2-3 times every time the top is golden brown until it is cooked.

When roasting the meat lets out its own juice in which it cooks, however is it is looking dry add a little water when you turn it.

The dish will take 2 – 3 hours to roast
