Orange Spiced
Lamb
Serves 4
For no count,
this will cost you 1½ pts per serving as you need to count the orange juice,
honey and rum.
500ml orange
juice
2 tbsp fennel
seeds, crushed
1 tsp garam
masala
1 red chilli,
finely sliced
3 tbsp honey
2 tbsp dark
rum
4 lean lamb
leg steaks
2 yellow
peppers, thinly sliced
salt &
pepper
orange
segments to garnish
Preheat oven
to 180ºC/Gas 4
Combine orange
juice, fennel garam masala, chilli, rum & honey in a large bowl.
Put lamb and peppers in a large roasting tin and pour over the orange juice
mixture. Roast for 45 mins, basting frequently.
Serve
garnished with orange segments. Nice with brown rice.
