Oatmeal and Cheese Roast

Serves 4

Points plan: 3 per serving
Core: 1½ per serving

1 large onion, finely chopped or grated
frylight
75g fine oatmeal
100g half -fat cheddar cheese, grated
150ml veg stock
1 tsp Marmite
1 medium egg, beaten
seasoning

Cook the onion in frylight for a few minutes until soft.  Add the oatmeal and stock and cook over a low heat for 15 mins, stirring from time to time. The mixture should then be fairly stiff.

Remove from heat, add cheese, marmite and seasoning.  Mix well with the beaten egg.

Bake in a moderate over Gas 4/180ºC for 30 mins in a cake tin.


Serve with veg.
