Caramelised Onion Filo Tarts

Makes 6
Whole recipe 13 pts
2 pts each

500g red onions, thinly sliced
frylight
2 tsp fresh thyme leaves
2 tbsp balsamic vinegar
2 tbsp demerara sugar
2 sheets Jusrol filo pastry (2 pts each)
3 x 30g portions camembert cheese

Spray a large heavy based non-stick pan generously with frylight and place over medium heat.  Add the onions.  Cook 20-25 mins, stirring until the onions are very tender. Stir in the thyme, vinegar and sugar.  Cook over high heat for 3-4 mins until the liquid has evaporated.

While the onions are cooking, heat the oven to Gas5/190ÂșC

Take the sheets of filo and cut itno 12 squares approx 4".  For each tartlet use 2 squares.  Spray each square with frylight and ease one into a tartlet tin then top with the other at a different angle.

Bake the tartlet cases for 6-8 mins until just golden.

Spoon theonion mixture into the tartlets.  Cut each portion of cheese in half and top each tartlet with a piece of cheese.  Return to oven for 4-5 mins until the cheese softens and begins to melt.


Serve at once with salad.
