Neapolitan Beef

Neapolitan Beef

Serves 4

frylight
2 onions, chopped
1 clove garlic, crushed
600g lean braising steak, cubed
1 x 400g tin chopped tomatoes
300ml red wine (3pts)
2 tbsp fresh herbs or 1 tbsp dried mixed herbs
1 tbsp tomato puree
salt & pepper
1 red pepper, cubed
1 courgette, sliced
1 aubergine, cut into chunks

Spray a large pan with frylight.  Heat and add the onions and garlic and cook until softened.  Add the beef and cook until browned.

Add tomatoes, wine, herbs, puree, and seasoning.  Bring to the boil.

Cover and cook for 1½ hours.  Gas 5 190ºC

Remove from the oven and add the peppers, courgettes and aubergine.  Cover and return to the oven for a further 30 mins, stirring halfway through.
