yellow pepper, deseeded & sliced
450g extra
lean minced beef
5 tbsp Pataks
mango chutney
2 tsp ground
coriander
150g
courgettes, sliced
salt &
pepper
3 tbsp
freshly chopped coriander
50g pine
nuts, toasted
150g cracked
wheat, pre-soaked (or couscous)
50g sultanas
Fry the
garlic and pepper for 2-3 mins. Add minced beef and cook until meat is
browned all over.
Stir in mango
chutney and ground coriander. Simmer for 20 mins, uncovered. Add
courgettes and cook 10 mins,
Season and
stir in fresh coriander just before serving.
Meanwhile,
toast the pine nuts in a dry pan. Stir into the cracked wheat or couscous
and mix in the sultanas.
Serve minced
beef over the wheat/couscous.
Freezing:
Mince sauce can be frozen for 3 months in airtight container.
