Apologies to
any Liverpudlians if this is not authentic. The recipe originally came
from the TV Times in the days when Brookside
was a favourite soap on Channel 4......possibly in the early 1980's, supposedly
a Corkhill family favourite!
Serves 4

350g corned
beef, sliced
2 onions,
peeled & sliced
frylight (ok
the original had oil in it!)
450g
potatoes, peeled, sliced and cooked
salt &
pepper
4 tbsp (60ml)
skimmed milk
15g very low
fat spread (the original used butter)
Place half
the corned beef in the base of an ovenproof dish. Fry the onions until
soft and golden brown. Place a layer of potatoes onto the corned beef,
followed by a layer of onions. Repeat the layers finishing with potatoes.
Season, pour
over the milk and dot with the spread.
Bake at Gas
4/350ºF/180ºC for 20 mins.
