Marinated Beef Salad

Marinated Beef Salad

Serves 4

Core recipe 
Points per serving: 2½

450g lean rump steak
3 tbsp lemon juice
2 tbsp lemon grass, finely chopped
1 tbsp fish sauce
1 onion, finely sliced
2 tbsp chopped fresh coriander
1 tbsp mint leaves
1 cucumber, chopped
1 chinese cabbage, shredded
 Mint and coriander leaves to garnish

Place steak in a non-stick pan or wok and sear for a few minutes.  Remove from the heat and finely slice.

Heat 4 tbsp water in a wok and cook the steak for 2 mins.  Transfer to a large bowl and add the cooking liquid.  Add lemon juice, lemon grass, fish sauce, onion, coriander and mint.  Stir well and marinate for about 2 hours.

Stir in the cucumber.  Arrange the shredded cabbage on plates and spoon the steak mixture over.  Garnish with mint & coriander leaves & serve
