Lentil,
Cheese and Carrot Slices
From the back
of a lentil pack

225g red
lentils (dry weight)
500ml water
1 large
onion, chopped
2 carrots,
peeled and grated
100g half-fat
cheddar, grated
1 tsp dried
mixed herbs
1 medium egg
25g wholemeal
breadcrumbs
Preheat oven
to Gas 5/190ºC/375ºF
Cook lentils
in the water until soft and all the water has been absorbed.
In a spearate
pan, fry the onion and carrot gently until transparent. Add all the other
ingredients and cook for 10 mins.
Transfer the
mixture to a greased (use frylight) 9" cake tin and bake for 30
mins.
Serve either
hot or cold cut into slices.
