Leek & Ham Roll Ups

Leek & Ham Roll Ups

Serves 4

Points per serving: 6 (Original points)

8 leeks, washed and trimmed
salt
8 x 30g slices ham
60g plain flour
8 tsp margarine
600ml skimmed milk
120g mature cheddar cheese
60g fresh breadcrumbs

Preheat oven to Gas 6/200ºC/400ºF.

Cover the leeks in lightly salted water and simmer for 10 mins.  Drain well.  Wrap a slice of ham around each leek and lay in a shallow ovenproof dish.

Put flour, milk and margarine in a pan and heat gently, whisking all the time until the sauce boils and thickens.  Remove from the heat and stir in most of the cheese.  Season and pour over the leeks.  Sprinkle over the remaining cheese and crumbs.  Bake for 15 mins until the leeks are heated through and the top is golden brown.

As a variation of this recipe you could use tinned celery hearts instead of the leeks.
