Greek Lamb
Couscous Loaf

1 pack lamb
mince
1/2 Butternut squash finely chopped or grated
250 g couscous
1 tsp paprika
1 tsp cumin
1 tsp ground coriander
1 tsp mild chilli powder
1 red onion very finely chopped (whizzed in a food processor)
2 cloves garlic
2 tsp salt
Freshly ground black pepper
Put all the ingredients in a bowl and mix thoroughly. Pack into a loaf tin and bake at 190 degrees conventional/ 170 degrees fan or Gas mark 5 for 40 minutes or until the lamb mince is cooked through.
Turn out onto a plate, slice and serve with wilted spinach and BNS chips.
Don't worry if it breaks up a bit when you serve it, it still tastes as nice!
Also, really good cold for luch the next day with a greek style salad.
