Gammon in Raisin Sauce

Gammon in Raisin Sauce

Serves 4

500g gammon steaks about 1cm (½")thick
low fat cooking spray
1 onion, chopped finely
2 tbsp raisins
8 thin strips orange peel
300ml dry cider
1 tbsp cornflour
150ml orange juice
freshly ground black pepper

Cut each gammon steak into 4 equal pieces and remove all fat.

Spray a large heavy based pan with low fat cooking spray, add the gammon pieces, searing them on both sides.

Add onion, raisins, orange peel and cider.  Heat, cover and simmer for 25-30 mins.

Blend the cornflour into the orange juice.  Lift the gammon from the pan and keep warm.  Stir the orange juice mixture into the pan and heat until thickened.  Cook for 1 min, season with pepper and serve with the gammon.
