Chicken with Orange and Mustard Sauce

Chicken with Orange and Mustard Sauce


Serves 4
Points per serving 4
4 Skinless chicken breasts
1 tsp sunflower oil
salt and pepper to season
2 oranges
2 tsp cornflour
5oz pot of low fat natural yogurt
1 tsp Dijon mustard

Peel and segment the oranges catching any juice in a bowl.
Season the chicken and fry in the oil for 5 mins on each side. Wrap in foil and place in oven to keep warm.
Blend cornflour with any juice from peeling the oranges. Add yogurt and mustard. Put into frying pan and heat slowly till boiling then simmer for for 1 min.
Add orange segments and warm through.
Slice the chicken breasts diagonally and serve with sauce.
Accompany with loads of veg and a serving od new potatoes (don't forget to add the points)
