Beef with Blackberries

900g fillet
of beef
fry light
150ml beef
stock
4 tbsp (60ml)
port (1½pts)
2 tsp
cornflour (½pt)
100-175g
fresh blackberries (or 200g tin in natural juice)

Preheat oven
to Gas 8/450ºF/230ºC. Trim any fat from the beef. Spray with
frylight and season with pepper. Roast for 30-45 mins (rare to medium
rare)
Remove the
meat from the oven, wrap in foil and keep warm. Drain any juices from the
roasting tin and add to the beef stock. Stir well, adding any meaty
peices from the base of the tin. Blend the port with the cornflour and
add to the pan, stirring until thickened. Stir in the blackberries,
season to taste.
Cut the meat
into 6 serving pieces and arrange on a plate with the sauce over.
