Beef Olives

Beef Olives

Core recipe

Frying steak - depending on numbers required ( about 4 - 6 oz per portion)
couscous ( I used 50 grm for 3 olives )
1 beef stock cube
2 spring onions, chopped  
1 small tomato, chopped    
1 clove garlic, crushed
chopped basil
gravy granules
1 shallot per person
few basil leaves

Flatten steak with a rolling pin.

Pour boiling water over couscous until all absorbed. Crumble in a stock cube and stir in chopped basil, onion and tomatoes.

Put couscous stuffing inside each piece of steak, roll and secure with a cocktail stick.


Place olives, shallots and a few basil leaves in a cooking dish pour in water ( about halfway up olives) and cook in a hot oven for about 30 minutes.
Remove olives from dish, remove cocktailsticks. Discard the basilleaves from the water and thicken with gravy granules.  Serve.
