Low fat cooking spray
500 g lean diced stewing beef
1 onion finely chopped
1 garlic clove crushed
1 tablespoon tomato puree
1 tablespoon Worcestershire sauce
1 tablespoon whole grain mustard
150 g baby carrots
600 ml beef stock
1 tablespoon beef gravy granules
450g potatoes peeled & cut into 1cm cubes
salt & freshly ground black pepper
Heat a large saucepan & spray with low fat cooking spray. Cook the beef in batches for 5 minutes until brown all over. Remove & set aside. Spray the pan again with low fat cooking spray & gently cook the onion & garlic for 3-4 minutes until softened.

Heat a large saucepan & spray with low fat cooking spray. Cook the beef in batches for 5 minutes until brown all over. Remove & set aside. Spray the pan again with low fat cooking spray & gently cook the onion & garlic for 3-4 minutes until softened.
Return the beef to the pan & add the tomato puree, worcestershire sauce, mustard, carrots & stock. Bring to the boil & simmer for 20 minutes. Stir in the gravy granules & season.
Meanwhile, preheat the oven to Gas Mark 5/190degC/fan oven 170degC. Put the potatoes in a pan & cover with cold water. Bring to the boil & simmer for 5-8 minutes. Drain & set aside.
Spoon the beef mixture into a 1.7litre (3pint) ovenproof dish & top with the cooked diced potatoes. Spray with low fat cooking spray & bake for 45 minutes until golden & crispy.
