Bacon, Potato & Onion Hot Pots

Serves 4

Core recipe
Points per serving: 2½

400g potatoes, thinly sliced
1 large onion, thinly sliced
2 veg stock cubes dissolved in 600ml hot water
4 lean back bacon rashers, each cut into 4 pieces
salt & pepper
a few thyme leaves (optional)

Preheat the oven to Gas 5/190ºC/375ºF.  Grease 4 individual baking dishes with spray oil.

Starting with potatoes, layer the potatoes and onion into the dishes, seasoning with a little salt & pepper.  Pour in the stock.  Bake for approximately 40 mins or until the potatoes are just tender.

Top each dish with 4 pieces of bacon. Return to the oven and bake for a further 10 mins or so until the bacon is crispy.


Allow to cool for a few mins, garnish with thyme and serve with lightly cooked cabbage.
