Salsa

Garlic & Chilli Salsa

Serves 4-6

6 cloves garlic, peeled
2 green chillies, seeded
2 red chillies, seeded
1 green pepper, seeded
2 ripe tomatoes, peeled & seeded
1 tsp ground cumin
15g fresh parsley
15g fresh coriander
1 tbsp lemon juice
1 tbsp sweetener

Blend garlic & chillies together until paste like.  Add the other ingredients and blend until chunky.

Serve as a dip or as an accompaniment to grilled fish or chicken.  Nice with burgers

Crunchy Apple Salsa

2 x Eating apples chopped
Red Chillies, seeded & chopped  to your taste
Chopped onion
Lime juice

Combine ingredients and leave for approx ½ hr.  Great served with grilled chicken.

Caribbean Kiwifruit Salsa

Serves 6

Core recipe

2 cups pineapple chunks, drained and chopped
2 yellow or red bell peppers, seeded and chopped
3 kiwifruit, peeled and chopped
1 small red onion, finely chopped
1 bunch   fresh corriander, finely chopped
Juice of one lime
Dash of cayenne pepper


Combine all ingredients in a bowl, toss thoroughly and serve with fish or chicken.
