Rich Beef and Prunes

Rich Beef and Prunes

Serves 6

Points per recipe: 12

1lb 2oz, rump steak
6 small onions or shallots sliced
6 carrots cut thickly
3 1/2 oz prunes in natural juice
1 can chopped tomatoes,
1 pint beef stock
grated zest of an orange
1 tsp thyme
1 bayleaf
salt ,pepper

Spray a large lidded pan with frylight and cook the beef in 3 lots until brown all over.
Season and pop on a plate till the other beef is done.
When all beef is done pop back into the pan and add the other ingredients,
Scrape bits of the bottom of the pan and bring to boil, then simmer for 1 hour,

You can use 1lb mushrooms and veg stock for a vegetarian version and a points value of half per serving,

I would do this in a casserole dish myself, on Gas 4 and cook for 1½ hours.
