One-Pan Mediterranean Lamb Chops

Serves 4

Full Choice 4½ pts per serving

4 medium lean lamb chops
2 courgettes, cut into chunks
1 red pepper, chopped
1 yellow pepper, chopped
1 red onion, cut into 6 wedges, remaining intact at the root end
10g fresh thyme, leaves only
100ml red wine (1pt)
400g tin peeled plum tomatoes
185g tin pitted black olives, drained
salt & pepper

Seal the lmb chops in a frying pan over a high heat, about 1 min each side.  Remove and set aside.

Add courgettes, peppers, onion and thyme to pan.  Cook 3-5 mins or until veg soften and take on some colour.

Add wine and tomatoes.  Top with the chops, cover and cook for a further 10 mins.


Add the olives and season to taste.  Serve
