Muesli

Muesli

This overnight-soaked muesli means your breakfast is ready whenever you are! It's nutrient-packed and will keep you going until lunchtime.

Serves 8

Points per serving: 2 

50 g oats or oatmeal, porridge oats
50 g rice & wheat flakes, (rice flakes, available from health food shops)
25 g wheatgerm
40 g sultanas, or raisins
25 g mango, or papaya, dried
25 g dried apricots, ready to eat
25 g almonds, chopped
150 ml skimmed milk
1 small pot very low-fat plain yogurt, or low fat fromage frais, 2 tbsps required
50 g grapes, seedless

Mix together the porridge oats, flaked rice, wheatgerm, sultanas or raisins, mango or papaya, apricots and almonds. Keep in an airtight container and use as below.

To prepare one serving, weigh out 30g of the muesli mixture into a serving bowl. Add 150 ml skimmed milk, then cover and refrigerate overnight.


In the morning, serve the portion of muesli with yogurt or fromage frais, topped with the grapes.
