Moroccan Lamb with Orange & Couscous

Serves 4

Full Choice 5½ pts per serving

spray oil
450g lean lamb, cut into cubes
200g couscous (dry weight)
1 x 400g tin tomatoes
100ml stock
1 orange, peeled and cut into segments
25g sliced olives (from brine)
handful fresh coriander, chopped


Spray a non-stick pan with spray oil and heat.  Add the lamb and cook for 10 -15 mins until golden and cooked.  Stir in the couscous, orange segments, olives, tomatoes and stock.  Season and cover the pan.  Cook 5 mins, adding more stock or water if it gets too dry.
Sprinkle with coriander and fork through to mix.

Serve
