Date & Sesame Bites

Makes 10

Points per serving: ½

10 fresh dates
3 ready to eat dried apricots
25g low fat soft cheese
1 tsp sesame seeds

Split the dates along their length and remove the stones.

Finely chop the apricots and mix into the cheese.  Spoon or pipe the cheese into the date cavities, then sprinkle with the sesame seeds.



Pizza Stars

Makes 20

Points per serving 1

120g self raising flour
pinch salt
1 tsp mixed dried herbs
25g polyunsaturated margarine
4 tbsp skimmed milk
3-4 tbsp tomato puree
90g reduced fat cheddar cheese, grated
6 small pitted balck olives, sliced
fresh herbs to garnish

Sift the flour and salt into a mixing bowl and add the herbs.  Rub in the marg until teh mixture resembles fine breadcrumbs.  Mix in enough milk to make a soft but not sticky dough.  Roll out on a lightly floured surface and cut into star shapes, using a star shaped cutter.

Spread shapes with tomato puree and top with grated cheese and tiny slices of olive.  Place on non stick baking sheets.

Preheat the oven to Gas 6/200ºC/400ºF.  Bake the pizza stars for about 8 mins or until golden brown. 

Serve warm sprinkled with fresh herbs.

Halloumi Pepper Grills

Serves 4

1½ pts per serving both plans.

Slice 2 red or yellow peppers into 6 pieces lengthways.  Remove core and seeds.  Grill skin down for 3-4 mins.  Slice 75g Halloumi cheese thinly.  Place the cheese on the peppers with sprigs of thyme or rosemary.  Season and grill for 2-3 more minutes until the cheese browns and bubbles.  Serve 3 pieces per portion.
