Like a pizza
but with a meat base!

Base:
450g extra
lean minced beef
100g onion,
finely chopped
1 tsp english
mustard
1 tsp dried
mixed herbs
salt &
pepper
Tomato
Topping:
400g can
chopped tomatoes
1 clove
garlic, crushed
1 tbsp tomato
puree
Cheesy
Topping:
1 x 300g tin
99% fat free Campbells
mushrooms soup
150ml skimmed
milk
1 medium egg,
beaten
100g extra
light philadelphia
2 tbsp grated
parmesan cheese (3pts)
100g button
mushrooms, sliced
1 red and 1
green pepper, deseeded & sliced
In a large
bowl, mix the base ingredients. Press into a deep round tin 9"
(23cm) in diameter. Cover and chill in the refridgerator.
Preheat oven
to Gas 4/180ºC/350ºF
Make tomato
topping by placing all ingredients in a pan and simmering uncovered for 10 mins
until thick and reduced by about half. Season to taste.
Mix together
the soup, philadelphia ,
milk, egg and parmesan. Stir in peppers and mushrooms.
When ready to
cook, spread the tomato topping over the base. Top with the cheesy
topping, place on a baking sheet and bake for 35-40 mins until topping is
golden.
Allow to
stand for a few minutes before serving.
