Meatballs in Tomato Sauce

400g lean beef mince
coriander & parsley (fresh)
1 onion chopped small
red pepper grated
salt and pepper
1 jar passata
Italian herbs
Chives
Garlic
Mushrooms chopped
Egg white
Mix mince, egg, grated pepper, onion,salt pepper, parsley and coriander in a bowl
Roll mixture into 24 balls and then fridge for about 20 mins (or overnight is fine) to get them to set a bit
Fry them until brown (you are not cooking them so cook on a high heat – the idea is to get colour into them)
To make sauce put passata herbs garlic and mushrooms mix together and pour over he meatballs. Simmer for about 40 mins. If the sauce looks a bit dry towards the end add some water to thin it a bit
