Madras Curry Sauce

Madras Curry Sauce

Serves 4-6

Can be frozen

4 large onions
1/2 tin tomatoes
1 chilli.  or 1 tsp lazy chillis
1 tbsp madras curry powder
1 tsp cumin seeds
4 cardamom pod seeds
1tsp turmeric
2 tsp ginger or lazy ginger
1 large clove of garlic ..or lazy garlic
salt and pepper
1 pint chicken stock...add 2 sweeteners to stock
1 tube tomato puree

Chop onions soften in little water, add spices, tomatoes,puree, and stock stir in simmer for 1hr stirring now and then .

Fish out the cardamom pods.  Blend mixture until smooth. Put back pods in if you like.
