Lentil & Bean Bake

Lentil & Bean Bake

I had half of this for about 6 points. It would easily do 3 big portions.

1 red onion
2 large cloves garlic
100g red lentils
a carrot
stick of celery
bit of red and yellow pepper
small can of kidney beans
tin of plum toms
1 stock cube
water
dried thyme
300g sweet potatoes
300g potatoes

Fry in fry lite onion, then add garlic, then lentils, stock and some water and plum toms.

Then add everything else except the potatoes, herbs and kidney beans, simmer away, keep adding water to cover until all cooked and you get a nice thick consistency. 

Then add thyme and kidney beans.

Meanwhile boil sweet and normal pots and then mash them with salt and pepper, thyme and a bit of paprika.

Put the main bit in a casserole dish and then top with the potato mix.

Bake in the oven @ 200-220°C for about 30 mins
