Lamb Stew (Arni Tavas)

1 kilo of lamb cut into small portions
1 kilo of ripe tomatoes peeled and cut into pieces
1 kilo of onions cut into slices
1 kilo potatoes cut into 2.5 cm cubes
salt & pepper
2 – 2.5 tsp ground cumin
2 tsp cinnamon

Remove any excess fat from the meat. Salt to taste and place into a roasting pan,   Mix together the onions, tomatoes and potatoes with the cumin, cinnamon and salt and pepper.   Add the vegetables to the meat and mix.   Cover with foil and cook in   moderately hot oven (180 – 190 degrees for 1 hour.   Uncover and tunr the meat.   Cover and cook for a further 1 – 1.5 hours or until the meat is tender.   Remove the foil and continue to cook until the meat is browned and the sauce is thickened.
