Courgette,
Apple & Cheese Burgers
Makes 8

350g
courgette, grated
225g carrot,
grated
1 red skinned
apple, cored and finely chopped
6 spring
onions, finely chopped
1 garlic
clove, finely chopped
½"
(12mm) fresh ginger, peeled & grated
2 tbsp
freshly chopped sage
100g sage
derby cheese, cubed
100g fresh
breadcrumbs
2 edium eggs,
beaten
6 tbsp plain
flour
2 tbsp olive
oil
Mix all the
ingredients except the flour and oil. Season and form into 8 burgers.
Spread the
flour liberally over a flat plate and coat the burgers thoroughly.
Heat oil in a
pan and cook the burgers for approx 10mins turning halfway through until
golden.
Can freeze
these for up to 3 months, cook from frozen over gently heat for 15 mins.
