Chicken Koftas

Adapted from an old Tesco recipe. Maybe a good way of
getting some spinach into your unsuspecting family? They are quite green though
:)
Soak 75g of bulghar in 100ml of boiling water for 10 minutes
1 chopped onion
2 crushed garlic cloves
Couple of handfuls of spinach leaves
A good handful of fresh coriander - leaves and stalks.
Pulse in a processor.
Add 500g chicken mince
Pulse again
Add bulghar and 2tsps roughly crushed cumin seeds and a grind or four of good pepper. (I use a mix from saltandpepper.com with hot red peppercorns)
Pulse again.
Form into smallish balls - about 20. Chill in the fridge to firm up.
The recipe says to grill but I dry fry in a non stick pan. Serve with rice or noodles and a tasty sauce. I used basic tomato last night and it was very tasty.
4 each is a very generous portion - 3 would be OK with a bulkier sauce.
They freeze well and thaw well too.

500g minced chicken/turkey
¼ teaspoon black pepper
1 tabs chopped fresh coriander
1 egg, beaten
1 clove garlic,crushed
1 teaspoon salt
2 oz cornflakes,crushed
1 teaspoon chilli powder
Mix all ingredients together and form into 8 long koftas on flat
metal or bamboo skewers.
Place on a rack over BBQ and cook for 8 minutes turning frequently until
golden brown. Or cook under grill or in oven.
