Braised Lamb
Chops

2 tbsp plain
flour
4 lamb leg
chops trimmed of all fat, weighing approx. 450g (1 lb) in total
low fat
cooking spray
1 large
onion, sliced
small bunch
of fresh thyme or marjoram
150ml (5 fl
oz) stock
450g (1 lb)
sweet potatoes, peeled and sliced thickly
100g (3½ oz)
mushrooms, sliced
4 medium beef
tomatoes, thickly sliced
salt and
pepper
Put the flour
on a plate, season, then roll the chops in it ( I didn't bother doing this -
reducing recipe by 2 points!!).
Heat a large
frying pan with low fat cooking spray. Brown the lamb for a few minutes on each
side then set aside.
Spray the pan
with more low fat cooking spray and fry the onion for 4 minutes until softened.
Add the herbs
and stock, scraping up any juices stuck to the pan.
Arrange layer
of sweet potato slices on the bottom of the pan and then top with the lamb.
Cover and cook gently for 45 minutes.
Add the
mushrooms (I used loads more than 100g!) and then a layer of sliced tomato.
Season and
cook for another 15 minutes then serve.
If you use ordinary
potatoes the points will be 4½.
