TEXAN "BOWL OF RED"
Serves 4
Points per serving: with beef 5, with turkey 4½
Freezing recommended
200g long grain rice
low fat cooking spray
250g lean beef or turkey mince
1 onion, chopped
1 fat garlic clove, crushed or 1 tsp garlic puree
1 small red pepper, seeded & chopped
200g canned kidney beans
200g canned chopped tomatoes
2 tbsp barbecue or brown sauce
salt & pepper
Boil rice according to packet instructions, drain and set
aside.
Heat a large non-stick frying pan. When hot, spray
with lowfat cooking spray. Add mince and stir well while cooking so it
becomes crumbly and lightly browned. Stir in the onion, garlci and red
pepper and cook for 5 mins until softened. Add the beans and the liquid
out of the can, tomatoes and sauce. Season and bring to the boil, simmer
gently for about 10 mins, stirring once or twice. Mix in the rice and
stir until warmed through.
