SWEET POTATO & SAUSAGE SALAD


SWEET POTATO & SAUSAGE SALAD

Serves 1
Points 4½

1 medium sweet potato (200g)
Frylight spray
2 low fat sausages e.g. Bowyers 95% fat free
1 shallot finely chopped
small bunch chives, chopped
salt & pepper
Dressing:
1 tbsp half fat creme fraiche
1 tsp Dijon mustard

Preheat oven to Gas 7/220º/425ºF.  Scrub the sweet potato and cut into wedges.  Place in roasting tin and spray with the Frylight.  season & roast for 30 mins until tender

Meanwhile preheat the grill and cook the sausages until browned & cooked through.  Leave to cool, then chop into pieces.

Heat a non-stick pan and spray with Frylight, stir-fry the shallots for a few minutes until softened, adding a little water if necessary to stop them sticking.

Place the sweet potato, sausages, shallots and chives into a bowl.  Stir the dressing ingredients together and spoon over the potato mixture.  Toss together & serve.
