PEAR & CELERY SALAD WITH CHIVES


PEAR & CELERY SALAD WITH CHIVES

Serves 4

4 ripe dessert pears
juice of 1 lemon
1 head celery
150g virtually fat free fromage frais
2 tsp coarse grain mustard
¼ tsp turmeric
1 tbsp chopped fresh parsley
salt & pepper
1 tbsp chopped fresh chives

Prepare pears by slicing in half lengthways. Cut in half again, then using a small knife, cut out the core.  Chop the flesh into small pieces and place in a bowl with the lemon juice.

Chop the celery into small pieces and put in the bowl

Mis the remaining ingredients, execpt chives in a bowl, season and add to the pear and celery.  Stir well to combine. Sprinkle with chives and serve.
