Recipes
100g low fat
digestive biscuits, crushed (8½pts)
1 egg white,
whisked lightly
2 sachets
sugarfree jelly
2 x 200g tubs
Philadelphia extra light
1 x 200g
muller light strawberry
100g strawberries,
hulled & halved
In a bowl mix
the crushed biscuits and the egg white. Tip into a high sided 20cm (8")
loose bottomed tin and press down with your fingers or the back of a spoon to
make the base. Place in the fridge to harden.
Make up one of
the jellies with just 150ml (¼pt) boiling water then leave to cool slightly.
Meanwhile beat together the Philli extra light and the yogurt in a bowl.
Add the jelly. Beat together until well mixed. Pour this over the
biscuit base. Place in fridge for about 30 mins until set.
Meanwhile
make up the other jelly as instructed on the pack and leave ot cool but do not
put it into the fridge. Decorate the top of the cheesecake with the
strawberries and carefully pour over the jelly. Leave to set in the fridge.
(Approx 1 hour)
Variations.
Try lemon & lime jelly with citrus flavoured yogurt or raspberry yogurt
& jelly.
Strawberry Cheesecake
Serves 2
For the Base
50g Shredded Wheat Bite size mixed a little water
a drop of red food colouring
1/2 tsp strawberry flavouring.
For the Topping
100g Quark
20g Fat Free Fromage Frais
1/2 tsp Strawberry Flavouring
A few drops of red food colouring
2 Tsps sweetener(optional)
Decorate with about 7 - 8 strawberries cut in ½
Mix shredded wheat/water/strawberry flavouring/red food
colouring in a bowl and more water if needed (make sure it’s not sloppy) then
place into a small loose bottom flan tin press down with the back of a spoon,
put in the fridge to harden up.
Mix quark with fat free fromage frais/red food colouring/strawberry
flavouring until all are combined, once base is set spread the quark mixture
over the base and put back in fridge to set, once set decorate with
strawberries.
