Lemon and Berry Creamy Pots

(just like cheesecake)

Zest and juice of 1 lemon
12g sachet of gelatine powder
200g plain low fat soft cheese
250g low fat plain yogurt
5tbs sweetener
250g frozen summer berries or other fruit

Pour the lemon juice into a small heatproof bowl and sprinkle gelatine in. Leave to stand for 3 minutes to absorb the liquid then stand bowl in a small pan of gentle simmering water and leave to melt.

Mix together the lemon zest, soft cheese, yogurt and 4tbsp sweetener in a mixing bowl until smooth. Pour in melted gelatine and stir to combine evenly.

Divide mixture between 4 x 200ml glasses, cover with cling film and chill in fridge for an hour or until firm.

Mix berries with remaining sweetener (add more if necessary) and spoon on top of the pots just before serving.
