Chinese Chicken Wraps


Chinese Chicken Wraps

Serves 4

Points per serving 3

60g beansprouts
1 small carrot, grated
30g sweetcorn, thawed if frozen
chinese leaves or crisp lettuce
1 small red or yellow pepper, deseeded and sliced
6 mushrooms, wiped and sliced
180g skinless cooked chicken, shredded
½ tsp chinese five spice powder
salt & pepper
a few drops seasoned rice vinegar or lemon juice
4 medium flour tortillas

Mix the beansprouts, carrot, sweetcorn, chinese leaves, mushrooms and pepper.  Add the chicken and five spice powder then season to taste.  Sprinkle with the vinegar or lemon juice.

Lay out the tortilla wraps and divide the filling between them.  Wrap up and serve.
