Brown Rice Biriyani Salad

350 g dried rice, brown long grain, cook according to pack
1 tablespoon curry powder, mild
225 g peeled prawns, (8oz) cooked, thawed if frozen
2 large tomato(s), chopped
1/4 medium portion cucumber(s), finely chopped
4 portion spring onions, chopped
1/2 portion fresh green or red chilli(s), deseeded and finely chopped
2 tablespoon fresh coriander, chopped
1 pinch salt
1/8 teaspoon pepper, black, freshly ground
2 tablespoon lime(s), or lemon juice

Mix the brown rice and curry powder together.


Add the prawns, tomatoes, cucumber, spring onions, chilli and coriander. Stir together gently.


Season with salt and pepper, then add a squeeze of lime or lemon juice. Keep chilled until ready to serve.



Notes

Brown rice will give you more Vitamin B. Remember that it takes about 25 minutes to cook.
