AUBERGINE,
BEEF TOMATO & GOATS CHEESE ON CIABATTA
Serves 4
Points per
serving 5½
1 medium
aubergine, sliced into 8 lengthways
1 tbsp olive
oil
4 med slices
ciabatta bread
4 tsp sun
dried tomato paste
2 beef
tomatoes, sliced
60g goats
cheese (eg Chevre blanc) sliced
6 pitted
olives, sliced
½ tsp sesame
seeds
salt &
pepper
basil leaves
to garnish
Preheat grill
to hot. Arrange aubergine slices onto grill rack. Brush lightly
with the olive oil and grill until beginning to brown, turning once...about 4-5
mins.
Lightly toast
the ciabatta bread. Spread with sun dried tomato paste. Top with the
aubergines, tomatoes and cheese.
Return to
grill and grill 3-4 mins until cheese melts.
Serve,
scattered with olives, sesame seeds and basil leaves.
Could use
feta cheese or mozzarella instead of goats cheese....take off 1 point per
serving for this option.
