APPLE
CINNAMON MUFFINS
(2 POINTS EACH)
1 cup = 8 fl oz

1 cup Wholemeal Self Raising Flour
1 cup Self Raising Flour
1/2 cup Brown Sugar
1/2 cup Apple Sauce (in jar)
2 Egg Whites
1 cup Grated Apple
1 cup Finely Chopped Apple
3/4 tsp Bicarb Soda
2 tsp Cinnamon
TOPPING
3 tsp Sugar
1 tsp Cinnamon
1. Preheat oven 200 deg cent
2. Coat muffin tray with cooking spray.
3. Beat egg whites and sugar for 1 minute in a medium
size mixing bowl.
4. In a sperate bowl stir bicarb into apple sauce (it
will froth) then add to egg mixture.
5. Add in grated and chopped apple.
6. Gently fold in flour in one go, DO NOT BEAT as
this will make the muffins tough. Once flour is just
combined (mixture can look a little lumpy)
7. Spoon mixture into 10 prepared muffin tins.
8. Bake for 20 minutes or until cooked. Once cooked
and still hot, brush a little hot water over the top
of each muffin and sprinkle with topping
