CRUNCHY
COOKIES
(2 POINTS
EACH)
MAKES 15 COOKIES
1 cup Self Raising Flour
2 cups Corn Flakes
6 tbs (90g) Reduced fat Margarine (Flora Light)
1/3 cup Sugar
1 Egg White
1/2 cup Sultanas
2 tbs Desiccated Coconut
2 tbs Skim Milk
1. Preheat oven 180 deg cent
2. In a large mixing bowl cream margarine and sugar.
3. Add in egg white and beat.
4. Fold in coconut, sultanas, flour and milk, mix
together.
5. Fold in cornflakes until ingredients are combined.
6. Drop a dessertspoon of mixture onto a baking sheet
that has been coated with cooking spray.
7. Flatten each cookie.
8. Bake 20 minutes or until golden brown. Cool on
wire rack.
VARIATIONS
For a plain biscuit omit sultanas, add 1/2tsp vanilla
essence.
or replace sultanas with currants
or replace sultanas with 1/2 cup (50g) chocolate chips
