Thai Pork Salad
Serves 4

Full Choice 2 pts per serving
400g lean pork, sliced thinly
3 limes, fresh
2 tbsp rice vinegar
pinch cayenne pepper, ot to taste
2 tbsp thai fish sauce
bunch fresh mint, chopped
bunch coriander, chopped
1 red onion, thinly sliced
1 small white or red cabbage, finely shredded
1 tsp salt
Put pork into a pan with the juice of 1 lime.
Cover with salted cod water and simmer until the pork is cooked.
Strain the pork and then mix with the onion, mint
and coriander. Add the rest of the ingredients and mix well.
Serve.
Note for added
flavour, add chopped dry roasted peanuts, but remember this will bump up the
points.... 50g is 5½ pts
You could use ready cooked pork for this recipe if
you wanted,....left overs from a roast say. You could also do it with
beef or chicken or prawns.
