Stuffed Tomatoes


Stuffed Tomatoes

Full Choice 3 pts per serving

60g dry weight pastini (tiny pasta shapes), cooked
4 beef tomatoes
small red onion, chopped finely
185g tin tuna in brine, drained
2 tbsp chopped fresh oregano
2 tsp capers, chopped
3 large olives, stones and chopped
salt & pepper

Preheat oven to 180ºC/350ºF/Gas 4

Slice the top off each tomato and scoop out the pulp and seeds.  Reserve the shell, roughly chop the pulp and seeds and toss them with the pasta.  Add the rest of the ingredients.  Season to taste.

Spoon into the tomato shells, place on a baking sheet and cook for 20 mins until the tomatoes are tender.

2 large tomatoes, sliced

1 onion, chopped

1 tsp of polyunsaturated margarine

1 med courgette, cut into 6mm dice

1 garlic clove, crushed

140g sweetcorn

Salt n pepper

Canned spray oil

 

1. Spray a shallow dish thats big enough to hold the tomatoes with spray oil. Cut the tops off the tomatoes, then scoop out the pulp. Chop the pulp and spread it evenly over the base of the dish. Sprinkle the inside of each tomato with salt, then turn them over to drain.

2. Next, make the filling. Fry the onion in the margarine for 5 mins, then add the courgettes, garlic and sweetcorn. Cook gently for 10 mins, then remove from the heat and season.

3. Set the oven to gas mark 6/200C/400F. Turn the tomatoes over again and fill them with the courgette mixture. Stand the tomatoes in the dish on top of the pulp, replace their sliced off tops, and bake for 15-20 mins, until the tomatoes are just tender, then serve.

1 beef tomato, 1/2 slice ww danish breadcrumbs, 1/2 ounce ww cheese.1/2 chopped onion.

Slice top off tomato, scoop out middle and mix with other ingredients. Put top back on and spray with 1 cal. Bake in mod hot oven for about 20mins or cook in microwave for about 5 mins.  

If cooked in microwave oven, tends to collapse but it's delicious and very filling
