Sweet and Sour Pork Salad

Serves 4

Full Choice 3 pts per serving

No Count  ½ pt per serving

Use frylight instead of oil and this will reduce the points to 2½ for full choice and ½ pt for the whole recipe on no count.

1 bunch spring onions, trimmed & shredded.
1 large red pepper, deseeded and sliced
1 large carrot, cut into matchstick pieces
½ medium fresh pineapple, skinned & diced
170g beansprouts
450g pork filler, cut into thin shreds
1 garlic clove, crushed
1 tsp Chinese Five Spice powder
2 tsp veg oil (1½pts)
2 tbsp dark soy sauce
2 tbsp dry sherry (½ pt)

Mix the spring onions, pepper, carrot, pineapple and beansprouts together and pile onto 4 serving plates.

Mix the pork with the garlic and five spice powder.  heat the oil in a wok and stir fry the pork until thoroughly cooked.  When piping hot spoon the pork over the veg.

Mix the soy sauce and sherry and pour over the pork and veg.

Serve immediately.
