SUMMER BERRY LAYERS


SUMMER BERRY LAYERS

Serves 4
Points per serving 3½

60g Jordans original crunchy cereal (Raisins & Almonds)
300g plain low fat yogurt
2 tbsp clear honey
150g blueberries
30g caster sugar
240g strawberries, sliced
240g raspberries

Reserve 2 tbsp cereal and mix the rest with the yogurt and honey.
Put blueberries and sugar into a small pan and add 3 tbsp cold water.  Heat gently to dissolve the sugar and cook for 2 mins.  Allow to cool.
Mis cooled blueberries with the strawberries and raspberries.  Layer yogurt mixture into serving dishes with the fruit, sprinkling some of the fruit on top with the reserved cereal.  Chill until ready to serve.
