RED HOT PRAWN PITTAS


RED HOT PRAWN PITTAS

Serves 2

Points per serving 3

Freezing not recommended

2 medium pitta breads
low fat cooking spray
½ red onion, sliced thinly
100g stir fry vegetables
½ red pepper, deseeded and thinly sliced
75g prawns, defrosted if frozen
1½ tbsp sweet chilli sauce
salt & pepper

Heat a wok or frying pan until very hot.  At the same time warm the pittas in a toaster or under the grill.
Add 2-3 sprays cooking spray then add the onion and stir-fry for a few seconds.
Add the stir-fry veg and red pepper and cook for another minute or two, stirring all the time.
Add the prawns and stir-fry for a few moments to heat them through.  Stir in the chilli sauce, season and stuff into the warmed pitta bread.  Serve at once.
